Sow May to July when the soil is warm, so that germination is quick (to prevent bolting) in rows 30cm apart. At 3-4 leaf stage, thin out to leave only the most vigorous plants every 20cm. Cut leaves in the autumn, leaving the roots in the ground which will sprout beautiful small red balls of chicory.

Fill the leaves with mixed, sliced tomatoes, salt and pepper, vinegar, olive oil and garlic on top!
