Best harvested in spring when they are young, sweet and have a nutty flavour.

Towards the end of the season they are larger, less tender and more floury. The pod is usually discarded (and sometimes the skins of the beans are too) but when very young, and less than 10cm long, the pods, skins and beans can be eaten in their entirety. And the leafy tips of the plants can even be steamed and eaten too!
