Fast-growing, architectural plants, with silvery, thistle-like foliage and tall flower stems topped with fat, globe artichoke-like buds that open from June to September to reveal purple flowers that ar a magnet for bees and butterflies. Dead flower heads provide an attractive winter feature. The tasty young stems can be blanched and eaten like celery. Height 2.4m (8').
